More Chickpeas Please

Remember in yesterdays post I mentioned I had a great chickpea salad for you?  Well I am hear to share it with you today.  I do not know why but the only thing that sounded good yesterday afternoon was a salad with lots and lots of chickpeas! 
Chickpeas are one of my favorite types of beans, so I guess I shouldn't be to surprised I was craving them!  I had looked up a few recipes but nothing was striking my fancy.  The major debate was do I want a creamy salad or a vinegar based type salad?  I almost had to do a coin toss to decided!
Ultimately I decided on a creamy chickpea salad.  I had seen a creamy dill ranch dressing on a chickpea salad from eating well... but I cannot stand ranch so that was out.  For some reason a creamy sauce similar to the Tzatziki Couscous stuck out in my mind!  I did a quick scan of the fridge and saw we had everything I would need, grabbed the cucumbers, yogurt, chickpeas and sun dried tomatoes and set to work.  Yes I did end up making a huge mess in the kitchen!  I had spices galore that I had frantically pulled from the cabinet in search of the dill.  The end results of this salad were creamy and flavorful thanks to the 2 hours of sitting in a cold fridge while I worked out!  Ready to hear what you need?

Creamy Dill Chickpea Salad:
About 4-1/2 Cup Servings
1-15 Ounce Can Chickpeas (rinsed and drained)
1/4 Cup Greek Yogurt (I used Fage 0%)
1/4 Cup Sun Dried Tomatoes (not oil packed)
1/4 Medium Cucumber
1 Tablespoon Dill 
Garlic and Lemon Pepper to Taste
Sprinkle of Parsley
Fresh Basil for Garnish-Also adds a nice flavor kick!

Ready to see how easy it is?
What you will do:
Chop your cucumber, and combine cucumber and sun dried tomatoes in a bowl.
Add your yogurt to cucumbers and sun dried tomatoes, then your spices, 
Stir to combine, next add your rinsed and drained chickpeas, 
make sure you mix well you want every last chickpea covered in that wonderful sauce!
Garnish with basil and enjoy!  

This salad is perfect a top a bed of lettuce or simply eaten on its own!  A perfect light summer salad!  I hope you enjoy.  And as always remember to live Happily Ever Healthy.
