Spaghetti Pie

Hello Thursday.  
At this time tomorrow I will be heading up to the cities to catch a flight to Indy. I take off at 9:45 AM and Mark will be there to pick me up and take me back to Dayton!
I have a great recipe for you today, one that I thought would be a little tricky at first and came together way better then expected!  I should have made soup last night because oooh my gosh did Minnesota get cold!  I mean we are talking cold here people, I had on multiple layers!  Hooray for fall weather, now I just need to find my boots!  Ok, back to dinner... I made something along the lines of a spaghetti pie.  However dinner didn't start out in the direction of spaghetti pie.  I got started on sesame noodles only to find out mid recipe that I did not have all the ingredients!  Oops!  Note to self check cabinets before you start cooking!  However I think the lack of ingredients was really a blessing in disguise, because the spaghetti pie turned out to be more of a dish I was craving!

8 Ounces Spaghetti 
1/3 Cup Grated Parmesan Cheese 
1 Large Onion 
2 Eggs
2 Egg Whites 
1/2 Cup Skim Milk 
4 Teaspoons Extra Virgin Olive Oil 
Cooking Spray
Salt, Pepper and Lots of fresh Basil

Here is what you will do:
Get a pot of water boiling, and cook your pasta according to the directions on the box.  While your pasta is cooking chop your onion, and begin sauting your onion in the olive oil.  
When your onion is tender remove from your skillet and let cool slightly.
In a separate bowl whisk together your eggs, egg whites and milk.
Then stir in your onion, salt, pepper and basil.
Finally add your spaghetti and cheese and so that every last strand of  spaghetti is covered in the milk/egg mixture.
Spray your skillet with a bit of cooking spray and pour your spaghetti into the bottom of the skillet.  Let your spaghetti cook on one side for about 6 minutes.
Now place a plate over your skillet, and flip your spaghetti pie onto the plate.

Once your spaghetti pie is on the plate carefully slide it back into the skillet so you can cook the other side!

Cook for another 6 minutes.
Now carefully transfer the completely cooked pie to a plate, top with marinara sauce if you desire and serve in wedges!

I will be making this again, my dad and I were throwing around more flavor ideas and thought that adding artichoke hearts in the mix would be good.  Im thinking also a chunky bruchetta like sauce would be great on top of this too!  This a very simple dish that is done in no time, and to me has a wow factor!  I hope you enjoy, and remember to live Happily Ever Healthy!
